Bonnie's Energy Balls

Our Favorite Travel Snack

When we travel, I always feel as though we’re limited in terms of what we can eat while we’re on the road. My friend and personal chef Bonnie Ebert turned me onto her “Energy Balls” one day, and they’ve been a staple for us ever since. Because we only make these when we travel, we never get tired of eating them. They’re not only nutritious but very satisfying.

Bonnie’s Allergen-Free Energy Balls

Mix together the following dry ingredients:

1 cup quick oats

1 cup unsweetened coconut (you can toast this if you wish)

1/2 cup ground flax

1/2 cup mini chocolate chips

1/2 tsp. sea salt

Add in wet ingredients and mix together.  Bonnie puts a disposable glove on one hand and has found that it’s easier to mix the dough and form the balls.

1/3 cup honey or coconut nectar

1/2 cup nut butter (we use golden pea butter, you could also use sunbutter)

1 tsp. vanilla

Refrigerate for 30 minutes.  Form into 1” balls.  Again, we’ve found that we’re able to make the mixture more compact by using gloves on our hands.  Store in refrigerator.

Also, if you want to skip the chocolate, you could use seeds or raisins.  If you do this, add in 1 tsp. of cinnamon.
